Allspice/Peppermint:

Spicy Elf
1 oz. Belvedere IX Vodka
1/2 oz. Allspice Liqueur
1/2 oz. fresh lime juice
1 tsp. agave nectar
Ginger Beer
Directions: Shake the first four ingredients together in a cocktail shaker and strain into an ice-filled highball glass. Top with splash of ginger beer.
Garnish: peppermint sprig

Thyme/Cinnamon:

Holiday Thyme & Energy Tonic
1 oz. Bluecoat Gin
3/4 oz. Green Chartreuse (botanicals from 132 different plants)
1/2 oz. cinnamon-honey syrup*
3 sprigs of thyme, de-stemmed
1/4 of a ripe pear, sliced
2 tsp. Roots Remedies Energy Tonic
Moet & Chandon Champagne
Directions: Muddle the thyme, pear, and honey in a mixing glass. Add remaining ingredients except for Champagne and shake well. Strain over ice into stemmed glass.
Garnish: Garnish: thyme sprig and pear slice

Peppermint/Bitters/Cranberry/Nutmeg:

Around the World Punch
2 parts Peppermint tea-infused 10 Cane Rum**
1/2 part Royal Combier liqueur
1/2 part fresh lemon juice
1/2 part cranberry-nutmeg syrup**
Several dashes aromatic Bitters
Several cinnamon sticks and cranberries
Directions: Combine all ingredients into a punch bowl. When ready to serve, add block ice and stir well.

Coriander/Cranberry/Nutmeg/Rosemary:

1 oz. Coriander-infused Partida Reposado Tequila***
1/2 oz. Grand Marnier
1/2 oz. Cranberry-nutmeg syrup****
1/2 oz. fresh lime juice
Directions: Shake ingredients very well and strain into a chilled cocktail glass.
Garnish: floating cranberries and rosemary salt rim**

Non-Alcoholic: Peppermint/Cranberry/Nutmeg:

*Virgin* Around the World Punch
2 parts brewed Peppermint tea, chilled
1/2 part fresh lemon juice
1/2 part cranberry-nutmeg syrup****
Non-alcoholic sparkling cider
Several cinnamon sticks and cranberries
Directions: Combine all ingredients into a punch bowl. When ready to serve, add block ice and stir well.

* - Cinnamon-honey syrup: Take 2 parts honey to 1 part water, with several cinnamon sticks, and allow to combine over low heat. Simmer for 10 mins, chill, and serve.

** - Peppermint tea-infused rum: In an airtight container, add 3 peppermint tea bags and 1 bottle of dark rum. Allow to infuse for 30 mins. Remove tea bags and re-bottle and serve.

*** - Coriander-infused Tequila: In an airtight container, add in 3 tbsp. coriander seeds for every 750 ml bottle of Reposado tequila. Allow to infuse at room temperature for up to 1 week. Strain out seeds and re-bottle and serve.

**** - Cranberry nutmeg syrup: For every 1 cup of cranberries, take 1 tsp. freshly grated nutmeg, 1 cup water, and 1 cup sugar, and dissolve sugar over heat. Then simmer for 10 mins. Strain out nutmeg and cranberry pieces, chill, and serve.
